Wow today marks 5 years operating as XLB. We are beyond grateful to make it to such a milestone. In another time and place it might mark the success of such a business but as we all are navigating these unprecedented times we all don’t necessarily feel that confidence, as we’ve had to say goodbye to colleagues and friends that were beyond talented and what you would call successful. Opening a business is terrifying and exhilarating. You put everything you have into it, your money (and sometimes your friends and families money), your literal blood ( knives are sharp fyi) and the most precious of all your time.
It’s been the joy of our lives (feeding y’all) and the bain of our existence -especially when you have to be the makeshift plumber. Finding joy when you want to cry, (yes, that’s a sharpie clogging the toilet) its been all the things.
We had to make some difficult choices, closing our other restaurant to ensure that we could keep Williams healthy. Learning balance, asking tough questions, are we making a difference? Are we leaving it better than we found it? And we will continue to do so.
Y’ALL we have no idea what tomorrow may bring so today just we are happy, humbled and privileged to just be here now!
