NEW TO THE MENU: TAMALE PLATE!
Three fresh masa tamales with three different fillings, steamed in banana leaves, and made thin, resulting in rich moist tamales. Check out the video above to see how we make our masa at Xico.
The tamale features:
One yellow masa tamal filled with Oaxacan black beans & smoky chiles
One blue masa tamal filled with rich cow’s milk cheese
One yellow masa tamal filled with fresh fava beans & epazote
The dish is made with organic field corn from Mexico as always, and it comes with refried red beans and rice.
UPDATE ON CHEF KELLY MYERS
Her days are packed with rigorous physical therapy, which is good because it means Kelly is less bored and more focused. I can’t say exactly how long she will be there, but the estimate is about 3 weeks.
She continues to eat as much as she can, and is more determined than ever to get home and move forward!
