Named for the famed Vaux Swifts migration, Vaux from Executive Chef Sara Woods opens on Friday, August 9th
PORTLAND, Ore. (August 5, 2019) – Every summer, North America’s largest concentration of Vaux Swifts graces Northwest Portland on their annual migration south to Central America. Since the 1980’s, this flock of birds have roosted inside a chimney at Chapman Elementary School and thousands of revealers gather to take in this natural fleeting spectacle. The new restaurant Vaux (pronounced Vox) opens at the Canopy Portland | Pearl District on Friday, August 9th, named for this special Portland phenomenon. Vaux features an all-day seasonal contemporary menu that highlights favorite local products.
Led by Executive Chef Sara Woods and drawing on her diverse culinary experience at some of the country’s best restaurants, the seasonal contemporary menu draws heavily from flavors and products of the Pacific Northwest with Italian and French accents. Vaux offers breakfast, lunch, happy hour and dinner daily. Lunch menus feature a mobile menu designed for those on the go, including sandwiches, salads and flatbreads. Dinner features shareable dishes like Roast Half Chicken and Halibut with pistou. Bartenders create signature cocktails from Portland’s renowned Distillery Row, and serve world-class wines from Willamette Valley and beers from the country’s finest craft breweries. Vaux offers two daily happy hours, from 4 to 6pm, as well as late night happy hour from 9 to 11pm. Set amidst an extensive collection of fine and local art curated by neighboring Elizabeth Leach Gallery, including an expansive sculpture inspired by Vaux Swifts from Portland-based artist Sean Healy. Vaux boasts an outdoor patio along NW Glisan, dining room seating, a comfortable lounge and a private dining room perfect for intimate groups up to 30 guests.
Executive Chef Sara Woods is currently the only female Executive Chef at a downtown hotel in Portland, Oregon. Born and raised in Michigan, Woods attended the Culinary Institute of America in upstate New York, which led her to work at some of the most renowned restaurants in New York City including Oceana, Blue Hill at Stone Barns, and Commerce Restaurant. Woods further developed her craft as a food stylist and culinary producer with Martha Stewart and the Food Network, before making her way to Portland to experience the thriving Pacific Northwest culinary scene. After several years as celebrity chef Jenn Louis’ Chef de Cuisine at Lincoln and Ray, Woods joined the Canopy team as the Executive Chef.
