Vaux Launches Sunday Suppers Featuring a New Seasonal Dish and Wine Pairing Every Month

Executive Chef Sara Woods serves up a seasonal Sunday Supper dish each month, available Sundays only, with a local Oregon wine pairing .

PORTLAND, Ore. (November 5, 2019) – This fall, Executive Chef Sara Woods launches Sunday Suppers at the newly opened restaurant Vaux (pronounced vawks) at the Canopy Portland | Pearl District. Chef Sara Woods serves up a seasonal Sunday Supper dish each month, available on Sundays only. Chef Woods will highlight beloved comforting seasonal dishes like Coq au Vin, Cassoulet and Gumbo in the convivial restaurant designed for gathering with friends and family. Sunday Suppers also boast a unique wine pairing each month, thoughtfully selected from the restaurant’s wine list focusing on local small producers. Vaux Sunday Supper is available Sundays only, during dinner from 5 – 9pm at the restaurant located in Portland’s Pearl District.
Led by Chef Sara Woods and drawing on her diverse culinary experience at some of the country’s best restaurants, Vaux’s seasonal contemporary menu draws heavily from flavors and products of the Pacific Northwest with Italian and French accents. Vaux offers breakfast, lunch, happy hour and dinner daily. Lunch menus are more mobile, designed to dine in or for those on the go, including sandwiches, salads and flatbreads. Dinner features shareable dishes like Roast Half Chicken and Halibut with pistou. Lead Beverage Enthusiast Haley Miller creates signature cocktails from Portland’s renowned Distillery Row, serves world-class wines from the Willamette Valley and beers from the state’s finest craft breweries. The restaurant offers two daily happy hours, from 4 to 6pm, and late night happy hour from 9 to 11pm. Every Friday night, Vaux hosts #FridayNightFlights from 6-9 PM, with complimentary tastes of local wines, beers and spirits.

NOVEMBER:
Herb Roasted Pork Loin with stewed local heirloom apples ($16)
Featured Wine Pairing: Abbot’s Table Owen Roe 2017

DECEMBER:
Coq au Vin, chicken braised in red wine with seasonal vegetables and mushrooms

JANUARY:
Cassoulet, Toulouse sausage, duck confit, tarbais beans, and pork belly slowly braised and sprinkled with garlic bread crumbs

FEBRUARY:
Gumbo, Cajun gumbo of chicken, shrimp, pork belly, and andouille sausage

Chef Sara Woods is currently the only female Executive Chef at a downtown hotel in Portland, Oregon. Born and raised in Michigan, Woods attended the Culinary Institute of America in upstate New York, which led her to work at some of the most renowned restaurants in New York City including Oceana, Blue Hill at Stone Barns, and Commerce Restaurant. Woods further developed her craft as a food stylist and culinary producer with Martha Stewart and the Food Network, before making her way to Portland to experience the thriving Pacific Northwest culinary scene. After several years as celebrity chef Jenn Louis’ Chef de Cuisine at Lincoln and Ray, Woods joined the Canopy team.

And alcohol, in this case a2097 Comtes Champagne. It does include gratuity. We tasted every dish on the menu Plus many more that they bring out in between courses. Took about 3 1/2 hours to eat
