Pinela is an ancient, indigenous variety from the Vipava Valley in Slovenia, brought back to life by the Batič family. It spends five days on its skins and sees 24 months elevage in neutral Slovenian oak barrels. Notes of roasted fennel, apple, and pear skin. It is full-bodied and rich, with texture for days. The herbal qualities from the celeriac and earthy flavors from the black truffle will be a perfect match to the structured and textured wine.
