February Chocolatier Series 2019 – Portland
Alma’s Chocolate PB&J
Taking advantage of the Pacific NW’s bounty and fellow producers as partners, ever-evolving but always indulgent Alma Chocolates has brought back your childhood favorite in chocolate form. As is only right, notes of chocolate are present at the front and in the finish of this ice cream, with a subtle peanut buttery background and tart pop of strawberry in between.
Missionary’s Meyer Lemon Chocolate Sorbet (v)
What’s your take on whether chocolate and citrus can play nicely? Like Melissa Berry of Missionary Chocolates, who dreams of turning her proceeds into an integrative healing center, we haven’t held back on the assertiveness of lemon or the intensity of dark chocolate, marrying them in a rich vegan sorbet that we’d like to think has some healing properties of its own.
Cloudforest’s Gray Chocolate & Matcha
Would chocolate by any other name smell as sweet? We’ve turned Cloudforest’s gray bar, made with black sesame seeds instead of cacao, into an earthy, nutty base with pure bits of his sesame and matcha chocolates nestled throughout.
Xocolatl’s Oaxacan Honey & Pasilla Fudge
Our attempt to pay homage to the rarity of heirloom cacao and rich history of making chocolate, in ice cream form. Our ice cream is a nod to Xocolatl’s ties to Mexico and subsequent smoked chile and honey bar, delivering swaths of rich, Oaxacan-chile-spiked fudge throughout a singular Oaxacan honey base.
Woodblock’s Ecuadorian Chocolate w/ Cacao Fruit Jelly
This exotic ice cream redefines bean-to-bar. With teamed up with Woodblock to create this Ecuador-focused flavor with a light Ecuadorian-chocolate base, coconut stracciatella, and a unique cacao pulp jelly made from the fruit that contains the beans.
