Since our last newsletter, we’ve been getting an education in transitioning to takeout. Even more importantly, we’ve been listening and learning about how to further affect positive change. From racial equality to food insecurity, as a company we need to truly consider difficult truths about the world around us, and our own place in either perpetuating the status quo or serving as a catalyst for progress.
Quite simply, the world needs to change. More particularly, the restaurant industry needs to change. COVID-19 has already turned everything upside down and we see the rebuilding process as an opportunity to build something different, something better. We’ve started by using our kitchens to prepare more than 2,000 meals for Frontline PDX, Urban Gleaners, and former employees. We’ve also donated thousands of dollars to BIPOC organizations doing work on a national and local level. We couldn’t have done any of this without your support, so thank you! We are committed to continuing these efforts, both publicly and behind the scenes. We’ll keep asking for support, but we also want your feedback and ideas. We want you to hold us accountable and help us play a small role building a safer, more equitable, more sustainable restaurant industry and community.
This task is way bigger than one act—and certainly bigger than one newsletter. We’ll keep providing updates on changes both big and small. We’ll also keep trying to find the best way to continue employing the staff we’ve been able to retain, and slowly start to hire back more amazing people. With that in mind, here’s a quick update on our evolving takeout models, which are now operating out of both Tusk and Ava Gene’s.
TUSK IS BACK
We are finally back making food for everyone from our home! We can’t wait to see you on East Burnside. You can order online or just head over and order from a safe distance at our new takeout counter. Chef Sam Smith and the team have created a fun menu of sandwiches, bowls, salads, family meals, and desserts. And, of course, there’s hummus. And we’re offering a bunch of ingredients from our kitchen—from our house-made aleppo chili oil to dukka. It feels good to be supporting local farmers and purveyors again, and we’ll always have a few produce options available too. Hope to see you all soon!
