Cooking with Coal, Flame & Ash: Farm Dinner with Chef Lauro Romero, of King Tide Fish & Shell, and Lingua Franca
On Thursday, Aug. 30, Chef Lauro Romero of King Tide Fish & Shell is hosting a rare dinner on the farm at Your Kitchen Garden in Canby, highlighting Oregon bounty cooked like he did growing up in Mexico. The entire meal will celebrate hearth cooking – over ash, coal and flame (with a few adjustments for safety) – and the different flavors you can coax out of ingredients with simple technique. Dishes include, but are not limited to: creamed chiles & corn, with summer beans, pickled plum, marcona almonds (paired with Lingua Franca 2016 Bunker Hill Chardonnay); skirt steak with roast potato, onion ash and charred onion caramel (alongside Lingua Franca 2016 The Plow Pinot Noir); and lamb barbacoa in an ancho marinade (served with Lingua Franca 2015 Tongue ‘N Cheek Pinot Noir).
Chef Lauro has worked with notable local farmer and owner of Your Kitchen Garden, Sheldon Marcovitz, for years, though this is the first time they’ll open up a table for guests to serve a meal, fresh from the farm and right in the field. A truly intimate, Oregon experience.
