December 7, 2016 (Portland, OR) – Two culinary powerhouses reunite once again this month and next, as Farm Spirit chef/owner Aaron Adams hosts JolieLaide’s Vince Nguyen for a collaboration dinner on December 21st, and again for a kitchen takeover January 11-14, 2017.
On Wednesday, December 21st at 7:45 p.m., chef Aaron and chef Vince will present 20 vegan courses to 14 lucky diners at Farm Spirit. Dinner is $100, with house-made, non-alcoholic beverage service available for $27. Natural wine flights are available for $38, or $65 for reserve wines.
Chef Vince returns for a kitchen takeover the first week of January, Wednesday the 11th through Saturday the 14th, to serve a ten-course vegan tasting menu. Dinner is served at 7:00 p.m. for $65 per person.
Vince Nguyen is a former sous chef at two Michelin-starred COI Restaurant in San Francisco and Portland’s Castagna restaurant. Chefs Adams and Nguyen last paired together for a successful collaboration dinner in May of this year, and are excited to repeat the experience.
“We are always asked ‘What do you all do in the winter?’” says Adams. “It makes me smile each time. While it’s understandable, as there is a lot less growing in the fields, the truth is there is still a lot of produce to enjoy. I’m thrilled Vince will be joining us once again, so we can get mad-creative on all the carrots, parsnips, rutabagas, turnips, kale, chard, onions, shallots, garlic, apples, pears, quince, pumpkins, squash, mushrooms, sunchokes, celeriac…and all the other fruits, seeds, grains, leaves, and nuts that we’ll be bringing into the restaurant.”
Reservations are required for all dinners and available through the TOCK reservation system. Farm Spirit is a gratuity-free restaurant.
