‘High/Low’ Oyster Social ft. Chef Timothy Wastell
Our monthly Oyster Social is this Friday and we’ve got an ace up our sleeve. Timothy Wastell is a supremely talented chef who cares deeply about the food source. He counts farmers, plant breeders and seed savers among his heroes. In fact, you may have bought a black futsu squash from him at the Groundwork Organics farmers market booth or run into him at a seed trial tasting or an organic farming conference.
If over the years, you’ve had the pleasure of enjoying his food at DOC, Firehouse, Old Salt, Sweedeedee, Antica Terra or a recent farm dinner, you already know that his farm-forward dishes vibrate with a true reverence for the seasons and are always beautiful on both the plate and the palate.
This Friday, Tim will be lighting up Oyster Social with longtime friend and fellow chef, Drew Marquardt. The duo has devised a highly personal menu of small plates inspired by super seasonal high-brow takes on humble foods from their midwest upbringing. As usual, we’ll be popping fresh NW oysters and our friends from Merit Badge will be shaking things up behind the bar.
Tim is one of Portland’s greatest chefs without a kitchen, period. You definitely want to take advantage of this special one-time opportunity to taste the Wastell Magic!
