A dry, light and chillable red of Pais and Carignan. Pipeño is a term for peasant wine, drank by farmers and used in church services in Chile. It is a style that has been revived as an affordable, easy-drinking wine made of the old vines of undervalued grape varieties. The vineyard was planted in 1895, farmed without irrigation. Fermentation is with native yeasts.
Tasting Notes: The wine is light in color with bright notes of raspberry, cherry, and rose petals that lead into underlying hints of dried herbs, fennel seeds, oregano and thyme. This fruit driven, easy drinking wine has fresh acid and low tannin. It’s a perfect summertime red that can be enjoyed with a range of casual fare throughout the evening. Serve chilled.
2018 Dashe Cellars Chenin Blanc, CA $21
100% Chenin Blanc, a grape from France’s Loire Valley, this rich wine has crisp acidity with notes of grapefruit, apricot and minerals brought out from fermentation in 500 gallon egg shaped concrete vessels. The grapes were picked at night to keep them as cool as possible and then immediately pressed into the concrete fermenter. Grapes were fermented with native yeasts and bottled as soon as possible to keep the wine lively and fresh.
This wine pairs perfectly with food and is also a great summer sipper to enjoy as an apertif!
