In early 2018 we distilled bourbon for the first time and put down 10 barrels to mature. We haven’t made any additional bourbon since and have no plans to make more. We are excited to release the first two barrels of that limited production run.
It was important to us to not make “just another bourbon” so we started with higher quality ingredients than is typical for the category: organic white sweet corn, local triticale, and distillers malt. After fermenting with a traditional bourbon yeast the mash was double pot distilled, then brought down to a lower than typical barrel entry Proof of 110 before maturing in #4 char, 53 gallon, new American oak barrels.
Despite many requests for a bourbon release, we patiently allowed the whiskey to mature until we knew it was ready. The barrels were then carefully dumped and the whiskey was coarse filtered. In order to retain flavor and mouthfeel we did not “chill filter” the whiskey before bottling at 100 Proof.
The whiskey conforms to the bottled-in-bond regulations which were first enacted in 1895: Distilled by a single distiller in a single season, matured in new charred American oak barrels for over 4 years and bottled at 100 Proof.
The result is a delicious sipping whiskey which is definitely a bourbon, yet distinctly and recognizably Branch Point.
