This menu sees the return of several favorite house ingredients – blood orange shrub(b), amer picon – and the introduction of a few others – quince shrub, fennel-walnut soda, and a luscious plantain cordial.
Of course, our palate takes on a deeper note, as we shift down from the bright, citrus drinks to the soothing, rich tones of apple brandy, sherry, cognac and dark rums. Oh, and a whiskey or two, to be sure.
