As we progress further into the summer season, chef John Conlin is excited to evolve the dishes as more ingredients become available. Chef works closely with local farms such as Evans Farm, Sparrowhawk, and Edible Stories, sourcing the best produce of the Pacific Northwest in addition to the best fish from all over the world.

CHEF’S MENU

GEODUCK
cucumber, ice lettuce, tomato ponzu

SPANISH DAYBOAT OCTOPUS
haricot vert, huacatay cream, trout roe

KAUAI BLUE PRAWN
summer squash, chanterelles, lemongrass emulsion

CHINOOK SALMON
shishito, butter corn, truffles

MERO SEA BASS
eggplant, carrot, basque chili confit, brown butter 

BLUEBERRY
panna cotta, hibiscus sorbet

PEACH
almond dacquoise, noyaux ice cream

Designed with a shorter dining time in mind, it’s perfect for a post-workday or pre-theater dinner, or for those with a lighter appetite or who want to check us out before committing to the longer menu. It features a few “bites” to start, followed by most of what is on the Chef’s Menu as options to choose between for each of three courses.
