Park Kitchen is almost 1 year in on One House-Gratuity Free and we’re extremely pleased with how it’s going. We went into One House-Gratuity Free with 3 goals in mind. We wanted to establish a more sustainable and engaging working environment for our entire staff, create a better experience for our guests, and make sure the transition didn’t effect our bottom line. We’ve succeeded on all 3 accounts.
We’ve totally revamped how we train our employees. Now we are more than just cooks or just servers. Everyone has a full time position with benefits along with a competitive and steady living wage. Staff retention has increased. There’s more interaction between our staff and our guests as both are curious about each other’s experience in the new model.
One House-Gratuity Free allows us to look closely at what we offer our guests and how we can continue to provide an inspired experience at a great value. We didn’t want high wine prices to be a barrier to ordering great local wines so Chad Fasenmyer boldly re-worked our wine program by creating “Wines We Love, On The Cheap”. Each month we feature a local winery that we admire and offer their wines at retail mark up. (Yes, RETAIL MARK UP!). David Sapp noticed that most of our customers were eating 3-4 small plates for dinner or simply asking us to create tasting menus for them so he totally revamped our menu by increasing the number of small plates and improving our tasting menus.
