Spring 2019 at Castagna

New Dishes for Spring

Spring has fully arrived here in Portland and on our menu. Some of our current seasonal dishes on our Chef’s Tasting Menu include:

Spring Terrarium with onion custard, peas, and edible flowers (pictured above)
Rhubarb, sweet cicely, molasses
Halibut, oxidized green almonds, wilted sorrel (pictured below)

To make the Halibut dish, our culinary team shucks green almonds and lets them naturally oxidize. A rich and savory sauce is made from halibut bones and brightened with oxidized sherry. The halibut is brined, dried, and gently cooked on the French top, and paired with wilted sorrel for added acidity.

The Spring Terrarium features a savory onion custard, fresh sweet peas marinated in smoky charcoal oil, a sauce made from pea shells, and spring flowers from our garden. Although light and delicate in appearance, this dish is full of flavor.

Come experience the season with us! Our Chef’s Tasting Menu is available Wednesday through Saturday each week, and our Explorative Dinner Series (more details below) is available Wednesday and Thursday.

Explorative Dinner Series

Our Explorative Dinner Series, launched in celebration of our 20th anniversary in April, continues this month with our Surf & Turf-themed menu. This menu is available on Wednesdays and Thursdays until the last week of June, when we’ll switch to a new theme. Visit us to try the Surf & Turf menu (below) before it’s gone!

Surf & Turf Menu

Rapini, asparagus, saffron bagna cauda, sorrel, fine herbs, seaweeds

Squid ink brioche toasted in smaltz, anchovy aioli, roasted chicken juices flavored with lemon and thyme

Tidal pool of beets, charcoaled onions, mussels, chicken jus, sea beans

Crispy lamb belly, giant clam, spicy black bean, pickled shallot, jasmine congee

Pork jowl, little gem, oyster potato salad

Broken ice cream sandwich, molasses, dulse, yuzu

This menu is $75 per person, with optional beverage pairings available for $50. Reservations are available at the link below.

RESERVATIONSPatio Season at OK OmensPatio season is back! Come visit us at OK Omens and sip your wine in the sunshine. Our patio is open nightly until 11 pm. We have a new seasonal asparagus dish on the menu, plus some delicious spiced pork ribs and plenty of chilled wine for these warm evenings.
