The main star of this new taco is the Cotija Enchilado (chile-rubbed cotija cheese) made by Don Froylan Creamery, the local, family-owned creamery that produces all of our cheeses and our beloved crema.
¿Por Qué No? is honored to have a long-standing relationship with head cheesemaker and owner of Don Froylan, Francisco Ochoa, who helped start the creamery as family business in 2003. We first met Francisco about 15 or 16 years ago and started by buying their regular Queso Fresco, then their crema, then their Queso Oaxaca…now, we are thrilled to be highlighting their Cotija Enchilado in this wildly delicious new taco!
The Queso Asado taco comes topped with big slice of roasted poblano pepper and a brand new avocado-serrano salsa.
