In honor of his upcoming cookbook release, Chris Cosentino, owner/chef of Jackrabbit at the newly opened Duniway Portland, has created a special “Offal Good” a la carte menu, which will debut at Jackrabbit on September 12th. This menu will be available through September 14th in addition to the regular menu and will include dishes such as:
- Lamb spleen bruschetta
- Tripe & lobster
- Hangtown fry burger
- Marinated beef tendons
- Rabbit bits a la moutard
- Tuna heart pasta
- Calves brains & chanterelles on toast
Prices will vary, but guests can expect dishes between $15-$30.
Cosentino, along with writer and photographer Michael Harlan Turkell, will debut Offal Good: Cooking From The Heart, With Guts (Clarkson Potter), in late August 2017, a resource for mastering how to cook and honor the animals we eat and explore the unique quality of our ingredients. Offal Good: Cooking from the Heart, with Guts will be available for purchase at Jackrabbit for $40 (retail price).
