Portland, Ore. (Oct. 3, 2022) — The tea experience at Smith Teamaker Portland tasting rooms is getting a little bit sweeter with today’s launch of a new “Tea & Treats” menu to enjoy as we move into the holiday season. The renowned Portland full leaf tea company has partnered with Farina Bakery to craft a selection of Parisian-style macarons and pastries for its tasting rooms in Northwest and Southeast Portland. Smith also partners with Woodblock Chocolate to create a trio of enfleurage bean-to-bar chocolates, infused with Smith Teamaker’s signature teas. These offerings build on the iconic Smith Teamaker tasting flight created by Steven Smith himself in their first tasting room, which has been a must-try experience in Portland ever since.
“These flights are our playful take on the timeless combination of tea and sweets,” says Head Teamaker Ravi Kroesen. “At the same time, from a tasting standpoint, they also bring out complexity and nuance in these teas by way of the complementary and contrasting flavors we paired them with.”

Kroesen and Culinary Director Karl Holl collaborated on the curated selection of macarons and pastries. The pairing flights are offered alongside the option to choose your own flight from 30+ teas, including the wildly popular Holiday Collection (released today), and seasonal teas such as Ice Cream Royale (created in collaboration with Salt & Straw), and Chocolate Peppermint Pu-erh. Eight flavors of Farina macarons are available to purchase individually, as are pastries such as Marionberry Pop Tarts, Pumpkin Pecan Scones and Everything Bagel Galettes.
Tea & Macaron Pairing Flight
Fez + Pistachio – Fez is Smith’s version of a Moroccan Mint. Spearmint and Lemon Myrtle pair perfectly with this macaron, pushing up its pistachio flavor and transporting you to Marrakech.
Black Lavender + Rainbow Sprinkle – Just like cake and iced cream, this pairing was meant to be. Ceylon black tea with lavender and vanilla melts into the rich buttery goodness of this macaron.
Red Nectar + Lemon – A wonderful pairing that plays on contrasting qualities. The acidity of the lemon draws out the stone fruit notes hidden in this Rooibos tea, unlocking its complexity and gracefully rounding out this pairing.
Tea & Chocolate Pairing Flight
Meadow + Masala Chai – From the Camino Verde farm, this cacao is the most thoughtful fermentation of any cacao used by Woodblock Chocolate. The hue is dark as an eggplant and the flavor is like a rich, earthy chocolate pudding. To this we introduce the rich and spicy notes of Masala Chai. With notes of apple and honey, Meadow takes the scented Ecuadorian chocolate into the realm of spiced apple pie.
Keemun + Big Hibiscus – This Northwestern Madagascar chocolate is bright and cheerful, with some surprisingly identifiable dried fruit flavors like cherry and raisin. The perfect base to enfleurage with our luscious and fruity Big Hibiscus blend, a combination of red hibiscus, sarsaparilla, ginger and pink rose petals from Europe. Keemun is a deep, rich, and silky black tea from China that complements the dark fruit notes of the chocolate.
Shu-Cha Pu-erh + Peppermint–This double origin 70% cacao chocolate is a blend of Ecuadorian and Peruvian cacao. It has a balanced but dynamic flavor that is enhanced by the naturally occuring essential oil in our Pacific Northwest grown Peppermint Leaves. Shu Cha Pu-erh is a deep, fermented black tea–an excellent foundation to build on the bright mint notes from the scented chocolate.
Silent Night Latte – An annually awaited herbal infusion of Oregon Peppermint leaves, cinnamon and ginger melds together with housemade orange-clove syrup and steamed half & half
Chocolate Peppermint Glacier – Iced Peppermint Pu-erh (aged pu-erh tea, cocoa nibs and peppermint) is topped with tonic and shaken cold foam
Merry Maker’s Punch – Hibiscus flowers, cinnamon and sarsaparilla are simmered with apple cider and mulled spices. Add wine for extra cheer.
