Samish Bay Ladysmith / Thursday Wine Tasting / Raclette

February 5, 2020

Samish Bay Ladysmith
Organic Cheese from Washington
Based in Skagit County in Northern Washington, Samish Bay creamery knows that good milk leads to good cheese. Certified Organic, their operation is based on fresh cheese and yogurts, and their cows, a mix of Shorthorn and Jersey breeds, graze on their 200 acres of green pasture whenever possible. Winner of the First Place Award by the American Cheese Society in the “Fresh Unripened Cow Milk Cheese” Category, Ladysmith is their flagship cheese.
Ladysmith comes in two varieties; Fresh and Aged. Fresh is, simply put, milk in solid form, fresh flavors of grass and cream bursting through its crumbly, fresh curd texture. Aged, held for only a few weeks longer, hints at the Fresh it was, still lactic and sweet, but the flavors have become bolder with a tart yogurt tang, and the texture is silky and melt-in-your-mouth smooth. Nothing will make you feel the coming of spring-like these young cheeses, a welcome accompaniment to charcuterie or top with a dollop of Oregon Growers Black Cherry jam for a breakfast worth waking up early for.
