Salt & Straw Ice Cream Cookbook Launches on April 30

Salt & Straw celebrates the release of first cookbook with a cookbook-inspired ice cream series available in Portland area scoop shops this May

PORTLAND, Ore. (April 29, 2019) – Salt & Straw Ice Cream is celebrating the debut of the Salt & Straw Ice Cream Cookbook. Part cookbook, part biography, the book is meant to make incredible ice cream accessible, inspire and educate readers and share the story of how Co-founders and cousins Kim and Tyler Malek dreamt up Salt & Straw. Tyler, who also serves as head ice cream maker, shares more than 100 easy-to-make-at-home recipes, showing how home cooks can tap into their own creativity and invent original flavors inspired by seasonal ingredients and local flavors—wherever their imaginations may go. Published by Clarkson Potter, the Salt & Straw Ice Cream Cookbook will be released nationwide on April 30, 2019 and will be available for $25 in scoop shops and online at www.saltandstraw.com. The series will offer an opportunity to try some of Kim and Tyler personal favorites from over the years. COOKBOOK SERIES

Roasted Strawberry & Toasted White Chocolate
This first flavor made with California ingredients used beautiful Oxnard strawberries cooked briefly to achieve a desirable icy texture once in the sophisticated caramelized white chocolate custard.
Bacon Raleigh Bar w/ Xocolatl de Davíd
David Briggs of Xocolatl taught the Salt & Straw team to infuse caramel with different flavors. The resulting bacon caramel plus chocolate fluff and candied pecans in sea salt ice creams elicits an umami explosion that really satisfies.
India Pale Ale
Parallels abound between craft brewing and ice cream, and Breakside Brewery delivered inspiration and some tricks of the trade. Sweet cream steeped with hops and brewer’s malts captures the aromas and bitterness of IPA.
Rose City Riot
An homage to the Rose City, an old favorite of the Portland Timbers, and a whisper of ice cream’s Persian origins, this comely flavor comprises a pleasant rosewater ice cream layered with saffron cream and roasted pistachios.
Skittles Rainbow Sherbet
This playful flavor inspired the Student Inventor Series and provided the first taste of being impactful in local communities. Five individual Skittles sherbets are created and layered per tub, causing a kaleidoscopic effect when scooped.
