June means summer, and what would summer be without ice cream? Ruby Jewel artisan ice-cream makers, the sister duo of Lisa Herlinger and Becky Burnett, have updated this classic summer staple with June flavors that feature Nueskes bacon, homemade marshmallow fluff, chocolate truffle and basil — perfect for a double scoop!

Peanut Butter Dream — salted peanut butter ice cream with generous chunks of peanut butter cups.

In summer, Ruby Jewel sets up shop at the PSU Portland Farmers Market, with seasonal ice cream sandwich flavors crafted with market ingredients. In June, cherries from Oregon’s Cherry Country get top billing in Salted Double Chocolate Cookies with Cherry Ice Cream.

Lisa Herlinger pioneered locally made artisan ice cream when she debuted her homemade Ruby Jewel Ice Cream sandwiches in 2004 at the Portland Farmers’ Market.
