S’MORES ICE CREAM SANDWICHES AT THE PSU SATURDAY PORTLAND FARMERS MARKET
In summer, Ruby Jewel sets up their popular ice cream cart at the PSU Portland Farmers Market with a monthly seasonal flavor. In July we turn to a classic beach and backyard activity – S’mores. This ice cream sandwich twist on the classic dessert features a house made graham cracker cookie made with Bee Local’s Oregon high desert honey varietal and filled with double chocolate ice cream and house made marshmallow fluff. We finish the ice cream sandwich with a sprinkle of Jacobsen’s cherrywood smoked sea salt.
About Ruby Jewel
Lisa Herlinger pioneered locally made artisan ice cream when she debuted her homemade Ruby Jewel Ice Cream sandwiches in 2004 at the Portland Farmers’ Market. Made with the Pacific Northwest’s bounty of fresh dairy, seasonal berries, nuts and herbs, the small-batch, handcrafted ice cream captivated ice cream lovers in the Pacific Northwest. Sister Becky Burnett soon joined the company and together the passionate duo put down their culinary roots in Portland, Ore. and set out to expand their ice cream company committed to using the highest quality ingredients from Northwest farmers and artisan ingredient producers.
A decade later, Ruby Jewel ice cream sandwiches and pints are still sold at local farmers markets and also available in select west coast grocers from Seattle to San Francisco including New Seasons Market, Whole Foods Market, Andronico’s Community Markets and Zupan’s. The Ruby Jewel Scoop Shops in Portland, Ore. offer a tantalizing assortment of ice cream treats, homemade candy and toppings. A new production kitchen is opening in Portland, Ore. in summer of 2015 to bring more locally made artisan ice cream to stores nationwide.
