Robiola Roccaverano DOP
Robiola di Roccaverano D.O.P. is a lovely soft-ripened cheese for all the goat lovers out there. This cheese is made in the northern Italian region of Piedmont, in and around the town of Roccaverano. This particular robiola is the only one to have a PDO (Protected Designation of Origin) which requires the cheese to be made following specific traditional guidelines. Robiola di Roccaverano must be made with a minimum of 50% goats milk, the other 50% may be cow or sheep’s milk. However, the wheels we have now are made with 100% goat’s milk. Rindless and spreadable, this fresh cheese would be great paired with fresh fruit like summer peaches or figs or with a drizzle of extra-virgin olive oil and baguette.
