Ripe Cooperative: We’re Springing Forward with Some Big News

March 8, 2021

This weekend (a full year into the pandemic, can you believe it?!) we’re going to be SPRINGING FORWARD.

Celebrate this magical moment between seasons with special 3-hour braised, tender beef cheeks from our favorite lady rancher, Cory Carman of Enterprise, OR’s Carman Ranch. This 100% grass-fed beef will knock you out with depth of flavor. It’s paired with perfectly roasted vegetables hand-selected by Naomi from the farmers market, and a zesty fresh horseradish cream and will be available THIS WEEK ONLY.

Each meal comes with wine, salad, and dessert!As with all of our special dinners, it’s limited and first come first served.

MENU

Carman Ranch Beef Cheek “Pot Roast” for 2, with roasted farmers market vegetables + Fresh Horseradish Cream

Slow-braised Carman grass-fed cheeks, done in the style of pot roast with demiglace and assorted roasted vegetables from the farmers market, served with fresh creamy horseradish sauce

 

Gathering Together Farm Greens with roasted shallot, sherry, and mustard vinaigrette

 

Spring Carrot Carrot Cake for 2 with cream cheese frosting

This is Naomi’s parents’ wedding cake recipe – people always say it’s the best they’ve ever had!

 

Paired with 2019 Martin Woods Tualatin Estate Vineyard Gamay

One of the best Gamay Noirs made in Oregon! A single barrel wine with dark cherry, bramble, black pepper, spice, and supple tannins. Semi-carbonic and aged nine months in neutral oak. Bottled on August 17th, 2020.

Speaking of SPRINGING FORWARD:

This week will be the last chance to get our late-winter meal boxes and marketplace items as we get ready for some big changes. We are closing for the last two weeks of March to get ready to welcome you through our doors for the first time!

Starting the first week of April, we will be welcoming two (masked!) customers at a time to shop in person. We will also be offering same-day pick-up on most of our items, with extended hours and pick-up days. Meal boxes will require 24-hour advanced pre-order.

Plus, next week we will be sending out a survey to those of you who’ve purchased from us so far.

As a thank you for filling it out, we’ll automatically enter for a chance to win a $200 Gift Certificate when we receive your filled-in form.

This survey will help us be the best we can be for you, so please take a moment to fill it out next Monday!
