Revel in the season at Higgins

Hello Friends,

Le Réveillon is a time-honored celebration in France to venerate the “new awakening” that comes with the return of lighter days and the arrival of the festive holiday season. During my time cooking in the Alsace region of France, I loved the tradition of welcoming the season by sharing the best local winter dishes with family and friends.

At Higgins, it’s time to revel in the holidays with our annual Le Réveillon menu. This menu was created to bring a sense of coziness, togetherness and merriment, with seasonal delicacies prepared to nourish both body and spirit.

This year’s menu features crowd favorites like:

  • Salad of applewood-smoked goose breast, confit and green lentils with winter greens and a red wine glacė
  • Mussels simmered in Flemish ale, leeks, celeriac, mustard and thyme with crusty garlic toast
  • Oysters on the half shell with aji dulce granitė
  • Melted, washed-rind Cascadia Creamery Sawtooth cheese with crispy fingerling potatoes and pickles
  • Cassoulet with Ayers Creek Tarbesque beans, duck confit, Toulouse sausage and pork shoulder with a garlic crumb crust
  • Frangipane tart pâte brisée with crab apple jam, frangipane, white chocolate mousse and candied pepitas
  • Chocolate crème brulée with burnt sugar, cranberry compote and orange cream
