Andy’s Bird Box Wine Pairings Add a bottle (or two) of handpicked wines from our wine director to your Bird Box meal. Did you know Canard is up for a James Beard award this year for Outstanding Wine Program?Wine Pairing Whites
Chardonnay, VGW, 00 Wines, 2015, Willamette Valley, OR 00 Wines is a micro-producer (only 2,000 cases annually) based in the Willamette valley but their style is heavily influenced by Burgundy. They even produce a barrel of Grand Cru Corton-Charlemagne every year. 2015 was the inaugural vintage of VGW (Very Good White) employs a technique referred to as “black Chardonnay” which involves pressing the juice and letting it oxidize and turn a brownish color before fermentation; this will actually build up defenses against oxidation in the finished wine! This wine smells of Meyer lemons, hazelnuts and white flowers, it is simultaneously powerful and refined.
Chenin Blanc, Buddha’s Darma, Pax Wines, 2016, Mendocino County, CA Pam and Pax Mahle started Pax Wine Cellars in 2000. The vineyard fro this Chenin is just north or the City of Ten Thousand Buddha’s (a Buddhist monastery near Ukiah, CA). This vineyard was planted in 1944 and the old vines as well as varied soils make for a really complex wine. This bottling smells of quince, yellow apples, and spice with tons of bright acidity.
Wine Pairing Reds
Pinot Noir, Goodfellow Family Cellars, 2016, Willamette Valley, OR 2016 Marcus Goodfellow left his job at the Heathman Hotel Restaurant in 2002 to pursue his dream of making wine in the Willamette Valley. He continues to hone his craft and the wines get better every year. The hallmark of the Goodfellow style is balancing the abundant fruit of Willamette Pinot with savory and earthy notes. This wine smells of black and red cherries and plums, tobacco and wet leaves. A perfect match to grilled pork chops.
Carignane, Sandlands, CA, 2014 Tegan Passalacqua is the winemaker at Turley cellars and through this position he has traveled up and down California to monitor the various vineyards that Turley produces wine from. Sandlands is his private label that he uses to produce unique expressions of California wine from heritage California vineyards. Often these old vines are planted in sandy soils, that are resistant to phelloxyra. He only produces 4 barrels of this Carignane which is sourced from 2 vineyards. One in Contra Costa Country that was planted in the 1920, and one in Lodi planted in the 30’s. The wine smells of ripe raspberries but is not overly dense or concentrated, there are also lots of spice and savory notes!
