Four-course, family-style seasonal menu with wine pairings, $75
Portland, Ore. – March 12, 2018 – Winemaker/owner Beau Carufel of Random Wine Company and chef Bill Wallender will partner together for four courses of Portland’s best seasonal and local cuisine paired with unique non-Pinot Noir wine blends on Wednesday, March 22nd at 6:30 p.m. Tickets are $75 including gratuity, food and wine pairings.
“Showcasing Beau’s blends gives diners a great opportunity to taste wine from one of Oregon’s smaller producers,” said Chris Cooper, wine manager at Quaintrelle. “Plus, Beau is going beyond the popular Pinot Noir varietal and creating unique and complex blends with grapes such as Syrah/Viognier and Grenache Blanc/Marsanne.”
Random Wine Company is a nano-winery with annual case production between 350 and 400 cases. Because the Pacific Northwest has so many superb growing regions, Beau is constantly on the lookout for new places to source grapes. His 2012 inaugural vintage was sourced from Horse Heaven Hills AVA in Washington. Since then, he’s expanded to eastern and southern Oregon, as well as finding and using grapes from his home AVA, the Willamette Valley. Beau focuses on organic and sustainably farmed grapes and uses low intervention winemaking. He doesn’t use new oak, and every red wine sees a certain percentage of whole cluster fermentation.
