Portland is “going wild” with a new chef-inspired wild food series presented by Cascade Organic

Cascade Organic, specialty retail and wholesale food provider for the Portland Metro area is launching a unique ongoing wild foraged food series starting this May. Each event will feature a Portland-based farm-to-table restaurant offering a prix fixe dinner thoughtfully created by some of Portland’s most talented chefs. Each dinner will feature the option to add an Oregon wine pairing to really enhance the dining experience.

The first event will be held at Clarklewis PDX on May 17th at 6:30 pm.

The dinner will include a four-course, gluten-free prix fixe dinner featuring wild mushrooms, organic local seasonal produce, wild Oregon sustainably sourced seafood, and Oregon pasture-raised meat from Cascade Organic. Every item featured is from Oregon-based farmers, fishers, foragers, and winemakers. Clarklewis has sourced its products from Cascade Organic since 2013. Clarklewis has been the standard-bearer for Portland’s farm-to-table movement since 2004. The
philosophy has been rigorously maintained by Bruce Carey since he took over the operation in 2007. Their open kitchen exemplifies the honesty of their mission to serve always-delicious, Italian & French-inspired local, seasonal, sustainable fare.

Chef Warren Pinkston came to Portland in the Spring of 2007. Drawn to the bounty of the Pacific Northwest and an area that exemplified many of the culinary ideals that he grew up with: seasonal, local, sustainable, no waste cooking. During his time in Portland, he has worked with many highly regarded Portland restauranteurs. In the Fall of 2019, he fell into the position of Executive Chef at 23Hoyt – another Portland standard for quality and locality. In 2020, he took over the helm of both Clarklewis and 23Hoyt, helping to maintain the nearly 2-decade long tradition.

About Cascade Organic: Cascade Organic was born out of the desire to supply our community with hard-to-find wild foraged foods. It began by supplying Portland restaurants with wild mushrooms, then as the business expanded, Cascade Organic began supplying more locally sourced items such as fresh seafood, organic produce, Oregon-raised meats, and locally sourced pantry items. Cascade Organic’s mission is to develop partnerships with local farmers, fishers, foragers, ranchers, and many other small businesses to help create a sustainable food system here in Oregon. The intention for these wild foraged dinners is to bring awareness of our mission to Portland and surrounding areas and provide the option for retail customers to shop for these items from home.
