The US finalists for Spain’s prestigious Copa de Jerez were announced yesterday with Portland, OR represented. Tobias Hogan (Eat Oyster Bar) and Cheryl Wakerhauser (Pix Patisserie / Bar Vivant) will fly to New York City next week to compete against two other chef / sommelier teams in a chance to represent the USA in next year’s finals in Spain. The competition consists of creating three dishes, each paired with a sherry wine. The match of the wine with the dish is crucial. While the food must be well presented and delicious, it also must be a perfect match with the chosen sherry, and the match described in detail by the sommelier.
