Join us in March for Portland Dining Month
~ 3 courses for $33 ~

 

Available all month, Paolo’s special menu is playful, yet rooted in his native Florence and Tuscany. Look for special glass pours, too!

First course:

Ciaffagnone

A micro-regional Tuscan specialty from Manciano, in the wild and beautiful Maremma: a thin, oven-crisped savory crepe filled with ricotta, diced pear, a whisper of nutmeg and cinnamon and folded into a fagottino — drizzled with honey and a sauce of pecorino toscano, scattered with black pepper
Second course:

Calamaro ripieno

Squid stuffed with pappa al pomodoro (the classic Tuscan bread and tomato “soup”) served over chickpea purée, with tangy salsa verde

 

Third course:

Gnocchi finocchiati

Pillowy potato gnocchi in a sauce of fennel milk, light besciamella,
prosciutto toscano and fennel pollen

Note to our vegetarian friends: the first course ciaffagnone is vegetarian
and the gnocchi can be made vegetarian by leaving out the prosciutto;
unfortunately however, we cannot create substitutions for the squid course

Described as “hand shaved slices of rare Pink Mountain Rose apples only available for less than two months a year nestled on top of homemade pink apple sauce on a round of our old fashion pie dough.” Best thing I’ve put in my mouth for a while
