2022 Salt & Straw Vault Flavors
Hunk-a Chunka PB&B
Legend has it that Elvis spent long nights with friends chatting the night away over a towering plate of PB&J-banana-bacon sandwiches. Since then, this combination has become a hit at sandwich shops around the country, and back in 2014, we joined rank. Much like The King himself, this is anything but understated. Marionberry jam rockets through a spiced honey banana ice cream, but it’s peanut butter that steals the show– we melt the peanut butter into a white chocolate to create homemade stracciatella, then drizzle it in for a showstopper fit for a King.
Roasted Strawberry Toasted White Chocolate
Over 75% of the country’s strawberries are grown in California, so we knew we needed to pay homage to the glorious fruit when we opened our first shop there in 2014. Our favorites hail from Oxnard, so we gathered a bunch to show off their juicy, irresistible-ness in frozen form. Then, we added just enough sugar and heat to coax out some thickness and mixed in macerated fresh berries. Unlike jam, these maintain their texture and take on an almost fresh, icy quality in ice cream. Meanwhile, something beautiful happens when you caramelize white chocolate—it takes on a rich dulce-de-leche sophistication. Add vanilla, eggs, and cream to the golden-brown chocolate and you achieve an incredibly custardy ice cream that’s a perfect match for the bright California strawberries.
The Ultimate “French” Vanilla
Allow vanilla to reintroduce itself. Using our own unique blend of Tahitian, Mexican, and Bourbon vanillas, with just a dash of salt and molasses to bring forth the richest, most vanilla-y vanilla you’ve ever had, this is everything regular vanilla wishes it could be. In fact, this one is so good, we’ve dubbed it our unofficial official flavor. Welcome to the world of vanilla.
Chocolate Caramel Potato Chip Cupcake
Salty, sweet, and particularly hedonistic, this flavor emerged in August 2015 and has been asked for by name ever since. With malty chocolate ice cream loaded with hunks of chocolate cake doused in coffee syrup and chocolate ganache, it’s not hard to understand why. As if that wasn’t enough, we introduce potato chips into the mix—covering those coveted ridges with even more chocolate—and balance the saltiness and crunch with generous ribbons of rich, dark caramel. Inspired by the infamous Highway to Heaven cupcake from a former Portland bakeshop, Sugarcube, this flavor comes with a motto: If you’re going to have a scoop of ice cream, you might as well go all in!
Chocolate Hazelnut Cookies & Cream (v)
Our friends at Dandelion Chocolate have been roasting, conching, and crafting their own chocolate creations in San Francisco’s Mission District since 2010, so we dreamed up a totally over-the-top indulgent ice cream to show off their goods. We start with a dark chocolate ice cream made with coconut cream and hazelnut milk, swirl in stracciatella from Dandelion’s own Camino Verde – a bold chocolate with notes of almond – then add chunks of our homemade gluten-free and vegan oreos. This one’s far creamier than any vegan ice cream you’ve ever experienced—all the better to showcase that incredible chocolate!
