Piccone’s Corner chef Nic Maraziti will preview seasonal dishes from the new restaurant and butchery opening November 2019

PORTLAND, Ore. – September 19, 2019 – Piccone’sCorner chef Nic Maraziti will prepare a special four-course pop-up dinner with wine pairings on Thursday, September 26 at Jacobsen Salt Company. The menu will feature handmade pasta, seasonal salads and Wallow & Root heritage pork from the restaurant’s farm in Sandy, Oregon. The wine pairings, curated by Austin Piccone, will focus on lesser-known Italian varietals, as well as local Pacific Northwest favorites.

Piccone’s Corner is rooted in the Italian tradition of family and food, and chef Maraziti incorporates classic Italian technique for his seasonal and locally sourced menu focused on scratch pastas, fire-roasted lamb and pork, and salt-cured whole fish. The new restaurant and butcher shop is scheduled to open November 2019.

Thursday, September 26; 6-9 p.m., $115 per person, includes dinner, wine pairings and gratuity.

First

Hearty chicory salad with tonnato and torn bread

Winter squash salad with apples, pecans, sprouted barley

Second

Wild rice potato gnocchi with wild mushrooms, sage and brown butter

Wallow & Root pork shank ragu with housemade pasta

Third

Wallow & Root lamb, string-roasted and braised, with marinated Italian beans

Fourth

Fig, honey, goat cheese, and triple-crème tartlets

*Menu subject to change with seasonal availability

*Dietary restrictions can be accommodated prior to dinner

 

About Piccone’s Corner

Butcher and heritage hog farmer Austin Piccone will open Piccone’s Corner, a new neighborhood butcher shop, restaurant and bar, in late fall 2019 at 3434 NE Sandy Blvd. The 2,400-square-foot space will house a full-service butcher shop with whole-animal butchery and locally sourced meat from their local farm, Wallow & Root; cured Italian salumi, including culatello, fiochetto, nduja, guanciale, pancetta and coppa; and a full-service bar and restaurant with 42 seats open for lunch, happy hour, dinner and late-night snacking. The Piccone’s Corner culinary team includes owner Austin Piccone, chef Nic Maraziti, head butcher Noah Grobart and bar manager Will Stenberg.
