Olympia Provisions Awarded 2017 Good Food Award for Landrauchschinken Swiss Country Ham
Eleventh award highlights producer’s devotion to taste, quality, sustainability and social good
Portland, Ore. (Jan. 30, 2017) –Olympia Provisions, an authentic and house-made charcuterie and meats company based in Portland, Oregon, has received a 2017 Good Food Award in the charcuterie category for its Landrauchschinken Swiss Country Ham. This marks the company’s eleventh Good Food Award, an awards program that celebrates artisan products that are both delicious and responsibly produced.
Good Food Awards are granted to outstanding American food producers and the farmers who provide their ingredients to honor those who push their industries toward craftsmanship and sustainability while enhancing the agricultural landscape and building strong communities.
“It is such an honor to be recognized amongst other dedicated and responsible producers in America who are seeking to make change by, not only making delicious products, but also by sourcing ingredients in a responsible way,” said Elias Cairo, head salumist and owner at Olympia Provisions.
Cairo’s inspiration for the Landrauchschinken was his Swiss apprenticeship. When he wasn’t in the kitchen butchering elk and curing bündnerfleisch, he was exploring the idyllic Alpine countryside, rustic picnic in hand. The Swiss Country Smoked Ham is cured for 18 days, soaked in burnt sugar, flavored with a touch of juniper and rosemary and then smoked over apple and hickory wood. Served just like prosciutto, remove the skin, thinly slice and be transported to the Swiss Alps.
The Landrauchschinken is available for purchase individually ($85) or as part of the Alpenglow snack hamper ($250). In honor of this year’s award, Olympia Provisions is offering 10% off the Alpenglow hamper and Landrauchschinken, as well as past Good Food Award winners, including the Loukanika, Saucisson D’Arles, and Pork Liver Mousse (2011), Chorizo Navarre (2012), Salami Cotto (2014), Flaco Paco pepperettes and Salami Etna(2015), and Rigani Loukaniko (2016), with the promo code OPGFAWINNERS. The offer is available online at www.OlympiaProvisions.com from Jan. 24 to Feb. 24.

About Olympia Provisions
Olympia Provisions, an authentic and house-made charcuterie and meats company based in Portland, Oregon, began as Oregon’s first USDA-certified salumeria and now offers food-lovers two Portland restaurant locations and online product availability nationwide. Salumist and owner, Elias Cairo, grew up first generation Greek-American, with a father who made charcuterie at home. After five years in Switzerland under master chef Annegret Schlumpf, Cairo completed a chef apprenticeship. Utilizing the finest ingredients, he developed his skills and passion for making charcuterie, and the experience affirmed his beliefs – handmade is better. Back in Portland, Cairo set out to approach the craft of charcuterie with purity and patience, recreating a nearly extinct old world technique that’s seldom seen in America.
