Olympia Oyster Bar’s Coastal Oyster Shack in the City – 7/11 & 7/12

Chef and Owner Maylin Chavez of Olympia Oyster Bar’s popular coastal pop-up this summer – on Thursday, July 11th and Friday, July 12th Chavez will be bringing last summer’s “most interesting oyster and wine bar on the Oregon Coast” to the heart of our city at the brand new FunctionPDX’s expansive outdoor patio space located on NW 23rd!
Expect a la carte menu items like Grilled Whole Garibaldi Dungeness Crab, Grilled Oysters with Smoked Guajillo and Bee Local Sauce, her popular, acid-driven Ceviche Verde using local rockfish – named one of Portland’s 10 best dishes of 2018 – and Kataifi, elegantly wrapped in Phyllo dough and crisped. As always, west coast bivalves will be the highlight alongside her signature accoutrements of house-picked serranos, fresh limes, and house chili sauce. Beverages will include the restaurant’s engaging and celebrated natural wine list with hand-picked selections meant to be paired with Chavez’ dishes along with local beers.

Portland’s most celebrated oyster well offers 7-10 varieties of mostly Pacific Coast shellfish, with an occasional East Coast appearance. proudly sourced directly from highly sustainable family-owned farms. Chef/Owner Maylin Chavez is a native to Tijuana, Baja California Norte. She brings her heritage and passion for the sea to each dish she prepares. Her personal and professional experiences cooking in Baja, abroad, and being surrounded by the rich diversity of ingredients has created a direct imprint on her cuisine.
