News From Pigeon + Friends: Guest Chef Dinner Series
(UPDATE: Now with the correct October dates!) Earlier this month we told you that we had some exciting news to announce…Here now to finally share more! We’re launching a guest chef dinner series at Le Pigeon. It’s been a rocky year for all of us, including restaurants across the country, so we decided a little camaraderie and supporting each other was in order. Over the coming months, we will invite chefs from around the country to team up on a one-of-a-kind dinner with chef Gabriel and the whole Le Pigeon team.
First up, is Alaska born and raised chef Beau Schooler of Juneau’s In Bocca al Lupo. The menu these two chefs dreamed up is all about celebrating seafood. Beau and Gabriel first became connected through the industry support group Ben’s Friends, and both are sober chefs. While there will be wine, we will also offer up a very exciting spirit free pairing option.
A little more about Beau…Beau Schooler began his cooking career at age 14. After working at several restaurants throughout Alaska, he enrolled at The Italian Culinary Institute in Calabria, Italy, in 2006. After completing his studies in Italy he made his way to Juneau, Alaska where he is the chef and co-owner of In Bocca al Lupo, an Italian restaurant featuring Alaskan products, and the Rookery Cafe, a small coffee shop serving breakfast and lunch. He was a James Beard Award semifinalist in ‘15, ‘16, ‘19, & ‘20. In 2015 he won Best Seafood Chef at the Great American Seafood Cook-off in New Orleans. He continues to be a proud proponent of sustainable Alaskan seafood, and zero waste philosophy in regards to salmon butchery and cooking.

This dinner will take place on Wednesday, October 20th & Thursday, October 21st. There will be two seatings at 5:15pm & 8:15pm. The 5-course tasting menu and a beverage pairing (choice of wine or spirit free) is $175.00, plus a 20% automatic gratuity.
Tickets will be available through RESY on Sunday, September 26th @ noon. Tickets are non refundable, but transferrable at the responsibility of the ticket holder. Modifications to the menu and beverage pairings cannot be accommodated.
