News From Pigeon + Friends: Cellar Sale
Happy Monday All,
We’ve got a couple things we are excited about and want to share with you today.
The first is that we have updated our online ordering platform so that if you are ordering wine, a gift certificate, or a Le Pigeon T-shirt, it should be a smoother process for you, and if you want to buy more than one thing you won’t have to check out each time. What does this mean for you? Hopefully, nothing other than ordering wine packs and merch just got easier. If you have any ordering issues please let us know so that we can adjust things.
The second thing is that we are sliding in an extra wine 3-pack in this off week. We are offering a 3 vintage vertical of…. wait for it….. Gevrey-Chambertin from Domaine Denis Bachelet.
If you know about these wines, then to you we say, “yes, you read that right.” If you don’t know these wines and you want to treat yourself, or a wine loving friend, then don’t hesitate.
Half a block off the town of Gervey’s main drag at 3 Rue de la Petite Issue is an assuming set of wooden doors with a tiny brass plaque. Inside those doors is the magical workshop where the cherubic faced Denis Bachelet turns grapes into sips of heaven.
Denis farms just 3.5 hectares of vines in Gevrey Chambertin and just to the north in Brochon. While many vigneron turn grapes into delicious wine there is a touch of alchemy in how Denis turns grapes into wines that are always yummy. That sentence needs to be unpacked a little. The 6 wines he makes from Pinot Noir are all representative of the particular vineyards they come from and are unique to each other, and of course each vintage puts its own mark on the wines. However, we’ve yet to taste a wine from this Domaine that was not yummy, that didn’t just taste good and make you smile. Certainly, some vintages will outlast others, and any wine changes and may improve with age, but these wines are never awkward. They are never wines that NEED to age to be enjoyed – although doing so will only make them better. Someone once told me a truly great wine is delicious from the day it’s bottled on – you shouldn’t need to wait for it. Wise words, and they apply here.
The ‘village’ Gevrey-Chambertin is made from grapes grown in multiple vineyards within Gevrey-Chambertin: Champerrier, Derée, la Justice, Sylvie, la Burie, and la Platiére. One piece of the magic is all the vines were planted between 1932 and 1937, which mean the potential for complexity is high, and the yields are low. Hence the scarcity of these wines. There is no secret recipe once at the winery, other than a life of dedication and love for the wines. They are 100% de-stemmed, fermented with indigenous yeast, and aged in barrel (20% new) for 16 months in the cool underground cellar.
We wish we could say what makes them so special, what drives the deliciousness? It’s like the wind or the sea. It is just is.
TO ORDER select your wine bundle of choice, follow the steps to securely order your wine. All payments will be processed ahead of time through our website.

Gevrey-Chambertin, Vieilles Vignes, Domaine Denis Bachelet, 2013,2015, & 2016 (3 Pack) $340
While we’ve tried all 3 wines, it was never all at once. So while normally we prefer to present our own tasting notes, in this instance we are including the contemporaneous tasting notes by an outside publication (The Wine Advocate in this case). It seems just a little more scientific.
The 2013 Gevrey-Chambertin Village Vieilles Vignes has another broody bouquet… brambly black fruit mixed with woodland, almost wet sand aromas. These aromatics take you down into the earth instead of up into the air. The palate is medium-bodied with supple, sorbet-fresh red cherry and boysenberry fruit. This is full of energy, full of vim and vigor with a harmonious finish that delivers a touch of bitter lemon that lends it edge. Superb.
Denis Bachelet’s superb 2015 Gevrey-Chambertin Vieilles Vignes opens in the glass with a deep nose of crunchy cassis, red cherry and rose petal, mingling with bass notes of rich soil, espresso roast and grilled meat. On the palate, the wine is full-bodied, deep and complete, with excellent concentration, succulent acids and rich structuring tannins. Bachelet’s Vieilles Vignes bottling always rewards cellaring, and that will be especially true of this 2015
The 2016 Gevrey Chambertin Vieilles Vignes was only slightly touched by the frost. It has a perfumed bouquet with black cherries, crushed strawberry, a touch of soy and undergrowth, again, quite complex…. The palate is medium-bodied with silky tannin and hints of blood orange on the entry mixed with black cherries and blueberry, leading to a satin-like, utterly charming finish that leaves you begging for the next sip.
