Greetings and Happy 2018! We hope the first part of the new year has found you and your family in good health and happiness! We’ve been excitedly discussing dreams and goals for 2018. Chef Justin likes to keep the menu evolving and even in January he’s finding some interesting flavors and ingredients that have inspired several new dishes. Including a dish of kohlrabi steeped in antelope heart broth and a new dessert of black tea ice cream and grains of paradise.
Pictured above is our Oregon rockfish dish. The fish is seared and served with a matsutake beurre blanc and baby bok choy. There’s also a little surprise under the bok choy: a turnip green XO sauce. XO sauce is a Chinese condiment that normally includes dried fish or shellfish. Our turnip green XO is completely vegetarian but still has the bright level of flavor you would expect from the traditional version. What fun!
