It took longer than we expected, but Tavern’s new online take-out platform is finally LIVE. Via the “take out” link on our website, you can place orders for ASAP or scheduled pickup of current menu fare and you can schedule a night in advance for “Finish-At-Home” meals. Having this system in place will help us help you (as explained below).
We’ve gotten some colorful hate mail about take-out over the last couple months and I want to take a minute to explain what we’ve been up against and how this new system solves your problems by solving ours…
Because of society’s needs for social distancing, our big and safe patios have kept Tavern near capacity most nights this summer. Because society (rightfully) demands social-distancing requirements of our employees, the maximum number of cooks in our kitchen is mathematically limited to four + a dishwasher. Normally, on a busy night, there would be at least four plus a dishwasher plus either Chef Nate or Sous Chef Chris focused on the big picture at a kitchen station we call “the wheel.” Well, there is no wheel; there is no “big picture.” The chef is working five pans on the sauté station while synchronization production of the three other cooks as he times delivery of 15 orders on the “rail” and simply cannot handle anything more without degrading the service for guests who are “dining in.”
So, in order to protect our standards for our guests awaiting those 15 tickets, the chefs (with my support) would effectively shut down take-out on our busiest nights over the summer. It wasn’t because we don’t love you. It wasn’t because we don’t need the business before plunging into winter’s covid-ridden unknown. It’s because we couldn’t. At least not well.
So our new system solves these problems for us. It knows how long that call-in order will take without anyone asking. It knows that if there are 8 orders ahead of it that it might take 15 minutes longer. It knows when our busiest times of day are and when not to make promises we can’t keep. It lets us “turn off” items we are running low on. It knows that if your order is really big, that it should add some time to it. It knows what time the kitchen opens and the kitchen needs to start cleaning up. It knows that orders may take longer during remaining sunny weeks while our patios are packed but will be quicker once the rains return and we’re surviving in no small part on take-out orders.
Chef Nate and I have done everything we can to make this thing perfect. It may not be until it is stress-tested but will sit down every morning and make little adjustments to it until it is. We’re doing our best for you and we sincerely apologize for the times we couldn’t meet your needs. Know that nothing is more important to us.
SUCCESSFUL vs UNSUCCESSFUL OUTDOOR RESERVATIONS…
Please know that if the option of “outdoor” seating is not visible when you make a reservation that the patios are fully booked. Guests understandably but mistakenly make reservations for tables that are available indoors and write in the notes “outdoor table please.” Then, of course, they come in for their reservation and don’t understand why we didn’t save them a table outdoors. Keep in mind that “Standard” tables do have two giant roll-up doors making them indoor/outdoor. Thanks!
