Cheese Bar Cheesemongers Rock!!
The Cheesemonger Invitational took place this past weekend in San Francisco, a three-day celebration of all things cheese related, with cheese professionals from all over the country flying in to show off their best pairings. The Cheese Bar crew was well represented this year and we are proud to share the accomplishments of our team members that competed!

New Alpine Arrival: Alex ![]() This rainy Portland weather seems to call for the earthy, hearty Alpine cheese flavors that comfort us, and Cheese Bar is always happy to provide. A treat from Germany, Alex shows up in the case sporadically every year, and is usually gone as quickly as it arrives. A unique twist on the Alpine classic, Alex is produced by cheesemaker Albert Kraus. Using milk from his brother’s and neighbors’ herd of Brown Swiss Cows, Alex is made by hand using traditional methods. The large format wheels are washed with a brine that has been infused with local herbs, building up complex flavors at a very young age. As the cheese continues to age, the brine is enhanced with elderflower syrup and ash made from hay, giving the cheese a sticky surface and its distinctive, brick red rind. This cheese is a powerhouse of aromas and flavors, with scents of roasted nuts and cooked onions beckoning you to the rich, complex cheese you are about to enjoy. Up your grilled cheese game or enjoy simply on its own, you can’t go wrong with Alex. |
Thursday Wine Tasting January 23rd 5:30 to 7:30 Sara Stockwell of Rhone St. Wine Company will be pouring for our Thursday Tasting this week. Sara has selected four lovely wines to wet your whistle. Here’s this week’s lineup: JP Cellars, Vitae Springs Vineyard Rose, Pinot Gris/Pinot Noir, 2018, Willamette Valley, Oregon The Pinot Gris and Pinot Noir grapes that are used to make this wine come from 20 to 30 year old vines located in the Vitae Springs Vineyard, located near Salem, Oregon. This rose is dry with pleasant acidity. It has notes of violets, mandarin oranges, and fresh strawberries. Zuschmann-Schofman Zweigelt Klassik, 2017, Martinsdorf, Austria This red wine is made with the Austrian grape, Zweigelt. It is dark purple in color with aromas of cherries and earthy spices. Its medium body is balanced by round tannins and soft acidity. Willful Wine Co, Delfino Vineyard Tempranillo, 2017, Umpqua Valley, Oregon Whole clusters of Tempranillo grapes were fermented, and then pressed early to minimize the presence of tannins. The wine was then aged for 15 months in French Oak before bottling. This wine has notes of spicy fruit that is balanced by acid and lean tannins. Upper Five Vineyards, Grenache, 2016, Rogue Valley, Oregon Layers of dark fruit and black pepper are present in Grenache. Raclette Night is Back!! Every Wednesday until Spring 5:30pm until the cheese is gone! ![]() Every Wednesday until the tulips come up in the spring, we will be doing traditional Raclette service. Starting at 5:30 and going until the cheese is gone! We cut a quarter wheel of Raclette for service every event, so get in early because it could go quick! $7 per plate Roasted Potatoes, Ham, Cornichons and House Mustard all topped with ooey, gooey Raclette See you there! |
