CELEBRATE NATIONAL ESCARGOT DAY May 24th AT COCOTTE
May 11, 2015 – Portland, Ore. – A mainstay on Cocotte’s menu is getting superlative treatment in a few weeks. In honor of National Escargot Day on Sunday, May 24th, chef/owner Kat LeSueur will offer an “escargot flight” of three different gastropod preparations on both Saturday and Sunday:
Escargot Pâté with Mustard
Escargot in Hazelnut Tomato Romesco on Grilled Bread
Classic Cocotte Escargot in Herb Pistou Cream Sauce
Preparations for the day led chef LeSueur on a bit of an unexpected “wild snail chase,” in hopes of finding a local escargot purveyor. As Portlandia-perfect as the concept seems, she came up empty-handed, save for a small farm in Washington. For now, Provista and Classic Foods will remain her go-to suppliers for the meaty, smoky little bites.
“I guess we should consider the escargot gauntlet thrown!” laughs Kat. Considering the bistro serves over 200 escargot on a normal week, some enterprising farmer would already be guaranteed one busy restaurant account.
