Chef-Owner Joris Barbaray of Bergerac & Rachel Zoller of Yellow Eleanor collaborate to offer a 4-course mushroom-centric menu alongside a talk about foraging for mushrooms in the Pacific North West
The menu celebrates a different mushroom for each course and features porcini, chanterelles, black trumpet and candy cap mushrooms.
As a Pacific Northwest native, Rachel Zoller of YellowElanor (http://www.yellowelanor.com) grew up exploring the off trail depths of the forest and she teaches mushroom foraging workshops and lectures throughout the Pacific Northwest. She is an active member of the Oregon Mycological Society, leading field trips and teaching for a variety of their events. Rachel runs a small, but resourceful blog/website and has a YouTube page that features how to identify key edible mushrooms and other fungi facts.
Joris Barbaray is co-owner and Head Chef at Bergerac which opened in October 2015 serving from scratch French food with a heavy emphasis on dishes from his home town of Bergerac in the South West of France. He strives to introduce more Portlanders to the simplicity of French food using seasonal ingredients and local suppliers.
