Pan Seared Scallops with Mashed Yukon Potatoes, Rainbow Chard, Spinach and Roasted Garlic-Arugula Puree
This week, we’re mixing the buttery texture of diver scallops and Yukon Mashed with a blend of hearty greens. The rainbow chard and spinach will be wilted and add an earthiness while the roasted garlic and arugula puree will lend the proper kick of spice and pepperiness. You know what they say about eating your greens!
