Rhubarb Crumble with Toasted Anise
We grew up loving our Grandma’s rhubarb crumble with a scoop of ice cream on top, or “a la mode” as she used to say. To pay it homage, we make a simple vanilla bean ice cream and layered in lots of homemade, just picked rhubarb jam. Then we stuff the ice cream with fresh baked anise crumble for a crunchy, floral finish. It has a nostalgic flavor that takes us back to childhood, but also a spicy robustness that reminds us it’s spring.
Wildflower Honey with Ricotta Walnut Lace Cookies
The honey we get this time of year from our good friends at Bee Local is flavored with fresh spring wildflowers, which makes for perfect ice cream. Especially when we add a little creamy ricotta and tart lemon. For some texture, crunch and added deliciousness we fold in pieces our homemade whole oat and walnut lace cookies, frosted with buttery ricotta icing. Somehow it tastes light and refreshing and sweet and rich at the same time.
Steven Smith’s White Petal & Osmanthus
This new flavor features several flower components, all courtesy of the Steven Smith White Petal tea, a blend starring white peony tea, osmanthus flowers, and chamomile petals. We steep the tea in cream and combine with fresh candied peaches. To capture as much floral flavor as possible, we cook the cream into a rich custard, then fold the candied peaches back in before we freeze it into ice cream. You’ll probably taste the flowers first, especially the aromatic Osmanthus, and then the peaches will wash the flavor away. Until your next bite.
Orange Blossom Sorbet w/ Edible Flowers
Edible flowers are the epitome of our May menu, so If you’re going to try just one seasonal flower flavor, this is the one to try. This year’s recipe starts with sorbet made with organic blossoms, fresh orange juice, tahitian vanilla and a dash of back pepper. It tastes bright and fruity which provides the perfect platform to carefully encase our edible floral bouquet of peonies, borages begonias and nasturtiums.
Heart Coffee Chamomile Latte Sorbet
We don’t think of coffee as a flower, because it’s not. But then we started working with Heart Coffee Roasters we learned how they bring out the bright, floral flavors of their beans. We warm steep their Ethiopian Reko roast overnight to bring out the jasmine-y blackberry tasting notes, then mix it with chamomile-infused cashew milk to make a sorbet where the floral coffee flavor is truly the star. The result a dense floral sorbet that really heroes the unique coffee flavor.
