Monte Enebro is made by Paloma Baez in Avila, Spain. Paloma learned to make Monte Enebro from her father, Rafael, the creator of this lovely cheese. This goat’s milk cheese defies boundaries, being both a soft-ripened cheese as well as a blue. Rather than piercing this cheese in order to create blue veins, the blue mold develops only on the exterior. The interior cheese is crumbly with notes of cream, lemon, and black pepper. As the cheese ripens the flavor intensifies and develops a piquant quality often found in tradition blue cheeses.
Trisaetum Winery Tasting

Trisaetum Winery was founded in 2003 by Andrea and James Frey. This family owned and operated winery is located in the heart of Oregon’s Ribbon Ridge AVA, in Newberg, Oregon where the local climate and and soil help create amazing wine. Nick Clark of Trisateum will be sharing three lovely wines from Trisaetum Thursday evening.

Willamette Valley Chardonnay, Willamette Valley AVA, 2015
This Chardonnay is a combination of barrels from our Ribbon Ridge and Coast Range Estate vineyards. The 2015 Willamette Valley Chardonnay is classic, clear golden hay in color with hints of toasted hazelnuts and honeysuckle on the nose. The mid-palate has a lively and well-balanced presence, with notes of honeydew and fresh hay, while a pleasant, chalky minerality evolves on the long, lingering finish.
Willamette Valley Rose of Pinot Noir, Yamhill-Carlton, Ribbon Ridge, Dundee Hills, 2017
The 2017 rose is made from Pinot Noir sourced from three different vineyards in the Willamette Valley. Sourcing the grapes from different vineyards creates a well balanced and fresh rose. The 2017 Rose has aromas of fresh strawberries and orange blossoms. The palate has a lovely minerality with notes of watermelon and and orange cream.

This Pinot Noir is a combination of barrels from our three estate vineyards, representing the best AVAs of Oregon’s Willamette Valley. Ruby garnet in color with striking aromas of freshly ground nutmeg, Marionberry, and wood spices. The lively acidity is balanced by finely-textured tannins and a firm, long finish. Enjoy this wine now and over the next 8 years. It is a phenomenal everyday wine and value.
