The perfect cheese to get you into fall weather, come get your dose of Mimolette!

While the historical origin of Mimolette might still be under debate, its roots in Dutch Edam are undisputed. From the Normandy region, Mimolette stands out as a hard, aged cheese in a region mainly. Known for its distinctive cannonball shape and bright orange rind (from the addition of annatto), Mimolette often has features resembling an aged Gouda, sweet and caramelized. It’s truly unique flavor is provided by its aging process, which is what has also made this cheese difficult to acquire in the U.S. at times. Cheese mites, or “little affineurs”, as the French call them, work on the cheese while its aging and create tiny holes, producing a dusty, craggy rind that provides Mimolette with its signature texture and floral aromas. Aged 18 months, this “Extra Veille” version is the perfect cheese for the cooler weather we are approaching, with suggested pairings of rich red wines and dark beers.
