Tlacoyitos, inspired by Mexico City street food
On a tour of street food in Mexico City, we discovered blue corn tlacoyos filled with fava beans cooked with lard. It was one of those meals you never forget.
Now on our menu, Xico’s take: Tlacoyitos are fresh blue corn tortillas made in house, filled with creamy refried red beans.
We cook them on the griddle without fat so the subtle flavor of the blue masa shines.
Add to that a crunchy, tender cactus salad dressed in a vinaigrette made with coffee and sherry, fresh greens, and Portland creamery goat feta.

It’s smoky, with a hit of fresh lemon, and plenty of floral notes.
