Handmade Cheese and Pasta – Super Comfort Food Class
Local cheesemaker and author, Claudia Lucero and Leta Norton, chef and pasta maker have teamed up to offer a double whammy of a handcrafted food class at the popular teaching kitchen and event space, Portland Cookshop. Students will be greeted with a glass of wine and will enjoy a class-made pasta dish during class. They will learn the basics of making several delicious homemade cheeses and incorporate fresh ricotta into their own hand-shaped pasta called cavatelli. They will even get to take some pasta home to cook and share at their leisure. This comfort food class is perfect for a chilly Sunday afternoon in autumn. Claudia Lucero is the cheesemaker and entrepreneur behind Portland’s Urban Cheesecraft which celebrated its 10th anniversary this year. She is the creator of Williams Sonoma’s private label DIY cheese kits and sells her original cheesemaking kits worldwide. She wrote the books, One Hour Cheese and One Hour Dairy-Free Cheese and is working on two others to be announced in 2020. Her line of products and her writing has expanded into dairy-free cheese alternatives as a result of demand, including in her own family. Her work has been featured by NPR’s All Things Considered, Good Morning America, AM Northwest, Food Network, Rachel Ray and others. Leta Norton is a chef, mother, teacher, and pastaio (pasta maker). She discovered her love of pasta as a child over Sunday suppers at her Sicilian great-grandmother’s home. After receiving her BA in education from the University of Portland, she decided to follow her passion for food and cooking and enrolled at the Oregon Culinary Institute. Upon graduating, she took a job as pasta cook at Union Square Cafe in New York, one of the city’s most popular restaurants. There she honed her skills, grew a thicker skin, and continued her passion for pasta. Leta now lives in Portland with her husband and their two energetic boys. She spends her time cooking, eating, traveling, teaching pasta workshops, and preparing pasta from her designer kitchen.
