Two-time James Beard Award winning Chef/Co-owner Gabriel Rucker and Co-owner Andy Fortgang to transition away from traditional tipping structure at their second restaurant in downtown Portland
Portland, Ore., (December 2, 2016) – Beginning Tuesday, January 3, 2017, Little Bird Bistro will eliminate tipping. After successfully eliminating tipping at their acclaimed restaurant Le Pigeon, Chef/Co-owner Gabriel Rucker and Co-owner Andy Fortgang will unveil the model at their sister restaurant in downtown Portland. Fortgang and Rucker have played a major role in leading the tip elimination charge in Portland. Since the roll out in June, their tip-free model at Le Pigeon has proved a success, providing more wages for kitchen staff, and a seamless dining experience for the customer.
