Ben & Andy’s Wine Pairings
Add a bottle (or two) of handpicked wines from our wine team to your Bird Box meal.
St. Aubin, Sylvain Langoureau, 2018, Burgundy
Domaine Sylvain Langoureau is based in the village of St. Aubin which is located to the west above the villages of Puligny-Montrachet and Chassagne-Montrachet. Historically St. Aubin was considered a less prestigious appellation because its cooler micro-climate made it more difficult to reliably ripen Chardonnay every year. However, today things have changed. With better farming practices and with the effects of global warming, St. Aubin is gaining a reputation for mineral driven, chiseled white wines that ripen fully and reliably every year. The Domaine is a tiny family operation focused on producing world-class, organically grown Chardonnay. This bottling is sourced from various parcels around the village of St. Aubin and smells of lemons, green apple, and dried pineapple with enough body to match with the pork and great acidity to cleanse the palate.
Barbera d’Alba, Hilberg Pasquero, 2015, Piedmont
Michele Pasquero is currently at the helm of his family’s domaine which was founded in 1915 in the village of Bricco Gatti in the Roero. Michele is an avid believer in organic and biodynamic farming and the estate has vegetables, grains, corn, beans, rabbits, horses, cows, and pigs in addition to vineyards. The farmhouse and winery hasn’t changed much in the last century, other than the fact that primary fermentation is carried out in stainless steel tank instead of large cask. Luckily, the estate never fell victim to the allure of synthetic pesticides and herbicides whose usage swept across Europe and America in the 70s and 80s. This bottling comes from a 2.4 hectare vineyard with southern exposure and limestone and white clay soils. A few years of bottle age has really benefited this wine…it smells of blackberry, plum, tobacco and dried herbs with a wonderful balance between fruity and earthy aromatics.
All of the meals will include 3-courses, a fancy salad for assembling at home, a protein with sides packed ready for re-heating, and dessert. Each box is designed to be heated at home and will generously feed two humans.
Dishes will vary each week.
All boxes are nut free, but we are unable to accommodate any further dietary restrictions or modifications at this time.
Le Pigeon will be following strict safety procedures, and will offer curbside pickup or will bring the meal to your car.
